- A Madagascar dark, 65-75% (e.g. Chocolat Madagascar or Menakao)
- An Ecuador dark from Nacional/Arriba beans, 70-80% (e.g. Pacari)
- An intense dark, 85-90% (e.g. Lindt Excellence 90%)
Expert note
Unwrap everything before guests arrive and cut the bars into small squares: the guessing game dies the moment someone spots a logo. Serve at room temperature in the order A to F, light to intense, with water and plain bread or apple slices between rounds. One square per person per round is plenty; the 90% finale rewards the brave.
