Decant the Pauillac and Pomerol an hour ahead; serve all reds at 16-18 °C. Keep the Sauternes chilled (8-10 °C) and hidden until last: the sweet finale lands best as a surprise. Dark chocolate or blue cheese alongside the Sauternes steals the show.
